1 bunch of Collard greens
1 tbsp bacon grease or butter
1 small onion
4-5 cloves of garlic peeled
1-2 pieces of smoked meat ( I used turkey necks)
1 tsp crushed red pepper flakes (optional)
1 tsp salt and pepper
1 tbsp better than bullion chicken flavor
1 tsp bullion chicken powder
6-8 cups of water or chicken broth
1 tbsp hot sauce (optional)

I put shrimp in the gumbo and I make a broth out of the shrimp shells, and add it to the rest. That adds to the cost of the dish though, of course.

Once I saw chef Prudhome make roux fast with a higher flame, I now make my roux the same way. I now don't have the patience to do the slower way. Also, I have only seen that gumbo filet is added at the end of making the gumbo and some add it when it is served. I have used filet once or twice and I haven't noticed the difference. The way you make the gumbo is spot on. Sometimes I brown the andoulle or smoke sausage than make the roux with the grease from the andouille. ...but adding it later on works too. Just don't leave that flavor behind!!

I always eat my gumbo with a fork so I never thought to cut the sausage like that... But that makes it better to eat with a fork too... Can't believe I never thought of that... I just started cutting them a bit thinner instead
